In 2012, Grand Copthorne Waterfront Hotel proudly announced its collaboration with Unilever Food Solutions to launch the first Chinese banquet menu experience of its kind in Singapore. Enter the ‘Seductive Nutrition’ Service, which features healthier banquet dishes for wedding guests, while retaining the cuisine’s appetising and ‘seductive’ appeal. Together with Unilever Food Solutions’ Nutritionist, Yeap Pau-Wei, Chef Marcus Lai, Executive Chef David Toh and his team, have developed a menu that incorporates extra greens in each course; uses less salt and oil; and places emphasis on healthier cooking methods such as steaming and stewing. Guests are also able to fully understand how ingredients in each course are treated and prepared in the kitchen, thanks to a new menu that also supplies information on the sources of the ingredients and their cooking process.

The common cornstarch-based broth in Braised Seafood and Enoki Mushrooms is replaced with a brewed spinach broth, while the Deep Sea Scallops Lightly stir-fried with Green Asparagus and Honey Pea with Crunchy Macadamia Nuts comprises a medley of quality produce, and stir-fried instead of deep-fried scallops.
